What you will need for 4 servings:


  • 2 leeks
  • 2 cups (150 g each) vegan crème fraîche
  • salt and pepper 
  • 2 packages of fresh puff pastry


Step 1-The filling

  • Preheat the oven to 180°C  / 200°C top.
  • Wash the leeks, quarter them lengthwise and cut them into thin slices.
  • In a bowl, mix the vegan crème fraîche with the leeks and season with salt and pepper.

Step 2- Roll it

  • Spread half of the filling evenly on the puff pastry, leaving 2 cm free at the top edge (the long edge).
  • Now roll up the puff pastry from the long side and close the ends by pressing them together.
  • Now cut the roll into 16 slices and place the individual rolls on a baking tray lined with baking paper.
  • Do the same with the other puff pastry.

Step 3- Off to the oven

  • Bake in the oven for about 18-23 minutes or until the edges are lightly browned.
