Vegan Facon-Tarte


What you will need for 4 Servings:


For the dough

  • 500 g flour
  • 1 tsp salt 
  • approx. 250 ml water
  • 2 tbsp. oil

For the topping

  • Vegan crème fraîche (300 g)
  • approx. 200 g smoked tofu
  • approx. 500 g onions
  • 1 tsp cornstarch
  • 1 tsp. smoked paprika
  • Optional: 1 tbsp. oil

Method

Step 1- The dough

  • Put 500 g of flour, 1 teaspoon of salt, about 250 ml of water and 2 tablespoons of oil in a large bowl.
  • Now make the dough. Start with one hand, when the dough starts to take shape, continue kneading with both hands until you get a smooth dough. If the dough is too sticky, you need to add a little more flour and if it is too firm, add a little water.

Step 2- The topping 

  • Wash the smoked tofu with cold water and pat dry with a kitchen towel, cut into fine strips and place in a bowl.
  • Add 1 tsp each of cornstarch and smoked paprika powder and mix gently. Optionally add a little canola oil if the tofu is too dry.

Step 3- Roll out, spread and cover

  • Preheat the oven to 250°C top and bottom heat (it's important, unfortunately).
  • Divide your dough into 2 equal pieces.
  • Take one of the dough pieces and, using the rolling pin, roll it out on a floured surface until it's about the size that will fit on your baking sheet.
  • Place the dough on the baking sheet lined with parchment paper and prick it with a fork in various places.
  • Now spread 1/2 of the crème fraîche on the dough (leaving a bit of border) and top with 1/2 of the tofu.
  • Do the same with the other portion of dough.

Step 4- Put in the oven

 

  • Bake at 250°C t for about 15 minutes or until the edges are lightly browned. 

 

 

How can you tell if a dough is "smooth"? If you knead the dough long enough (at least 15 minutes), you can quickly see that the structure of the dough is very smooth, i.e. you cannot see any "pieces" or anything else.
