Pumpkin Soup

What you will need for 4 servings

Ingredients

  • 1 onions
  • 1 pumpkin approx. 1 kg
  • 500 g potatoes (floury cooking)
  • 2 tablespoons rapeseed oil
  • approx. 1 l water
  • 1 tbsp. soy sauce
  • Approx. 2 tsp. salt
  • 250 ml soy cream
  • Pepper 

Method

Step 1- Preparations

  • Peel the onion, wash and cut into rough pieces.
  • Wash the pumpkin, remove the seeds and cut into rough cubes. Peel, wash and also dice the potatoes.  

Step 2- Cook

  • In a large pot, heat 2 tablespoons of canola oil over high heat and sauté the onions, pumpkin and potatoes briefly and deglaze with water. When the soup boils, turn down the heat and continue to simmer over medium heat.
  • Once the potatoes and pumpkin are cooked through (after about 20 minutes), add the soy sauce and salt and puree with your blender. 
  • Then take the soup off the heat and add the soy cream. Then stir again briefly and season to taste with pepper and possibly salt. If the soup is too thick, you can add 200-300 ml of water.

Step 3- Serve

  • Simply serve in bowls with some bread, ideally pumpkin seed bread (while we're on the subject xD).

Small tip:

 

The soup is too thick when it would no longer pass as cream soup, but rather as mashed potatoes :)
