Inside Out Rolls

What you will need for 6 servings:

Ingredients

  • 600 g sushi rice
  • 6 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 2 tsp. salt
  • 6 tbsp. sesame seeds
  • 2 bell peppers
  • 1 cucumber
  • Optional: 2 avocados
  • 1/2 lemon
  • 10 nori leaves
  • Soy sauce
  • Wasabi

Note

Please enjoy avocados consciously, as the ecological footprint is not ideal. 


Method

Step 1- Sushi rice

  • Wash the rice with water until the water is clear and then cook according to package instructions.
  • In the meantime, put 6 tablespoons of rice vinegar, 2 tablespoons of sugar and 2 teaspoons of salt in a small saucepan, heat and stir until the sugar and salt dissolve. Then pour the mixture into a small bowl and let cool.
  • Once the rice is cooked, spread it on a baking sheet and add the vinegar mixture. Gently stir this in and cover the baking sheet with a clean, damp kitchen towel.
  • Let it cool completely.

Step 2- Preparations

  • Wash the cucumber and cut it lengthwise. 
  • Using a tablespoon, remove the inside of the cucumber and cut the cucumber into 20 thin strips.
  • Do the same with the bell bell pepper.
  • Cut the avocados in half and remove the pit, slice them as well, then drizzle with the juice of 1/2 lemon to keep them from turning brown.
  • Cut the nori leaves in half with scissors.
  • Toast 6 tablespoons of sesame seeds in a small skillet until golden.
  • Wrap the sushi mat in plastic wrap to keep the rice from sticking to it.
  • Bring all the ingredients to work and provide a bowl of cold water, this is for wetting your hands (otherwise it will get sticky).

Step 3- Let the good times roll!

  • You take a nori sheet and place it on your sushi mat, then lightly wet your hands with the water, spread some rice on your entire nori sheet and press the rice firmly.
  • Then turn the nori sheet over onto your sushi mat, rice side down. Make sure that the bottom edge is exactly at the bottom edge of the sushi mat (important for rolling).
  • Place a slice of cucumber 2-3 slices of bell bell pepper and avocado on the bottom third. Then you can roll up the sushi mat.
  • It is important to do this as tight as possible so that your roll holds. 
  • Then sprinkle the roll with some sesame seeds and press lightly.
  • Do this until you run out of ingredients. 

Step 4- Arrange

  • With a large, sharp and wet knife you can now divide the Inside out Rolls into 8 pieces of the same size. Moisten the knife again after each cut!
  • Serve with wasabi and soy sauce and enjoy your homemade sushi.
