Fried-Rice

What you will need for 4-5 servings

Ingredients

  • 500 g jasmine rice
  • 3 garlic cloves
  • 2 tablespoons dark soy sauce
  • 100 ml soy sauce
  • 4 tsp sugar
  • 2 tsp sesame oil
  • 4 carrots
  • 2 bell peppers
  • 1leek
  • 1 cup frozen peas (approx. 200 g)
  • 5 tbsp rapeseed oil
  • Optional: chopped peanuts for sprinkling

Method

Step 1- Cook rice

  • Take out the amount of rice and then put it into the pot.
  • Rinse the rice with clear water until it is no longer milky, but clear.
  • Either you have a rice cooker:
  • Prepare the rice in it (add about 1,5 times the amount of water to the rice) and then push the button
  • Or you have to cook the rice in the pot:
  • Put the rice in a pot with the water (about 1,5 times the amount of water to the rice) and bring to a boil.
  • Then stir once and turn the temperature to low and let it steam for at least 20 minutes.
  • Then set the rice aside covered with a kitchen towel.

Step 2- Wok sauce

  • Peel and finely chop 3 cloves of garlic and put them in a bowl and mix them with 2 tbsp dark soy sauce, 100 ml soy sauce, 4 tsp sugar and 2 tsp sesame oil until the sugar is dissolved.
  • Now let the wok sauce sit for at least 10 min.

Step 3- Preparations

  • Wash the vegetables and drain them.
  • Peel and finely dice the carrots and store them in a bowl.
  • Dice the peppers as well and store in a second bowl/plate.
  • Wash and cut the leeks into quartered rings and set aside in a bowl.
  • Prepare the peas according to package directions and drain.

Step 4- Off to the wok

  • Heat the wok with 1 tablespoon of rapeseed oil on high heat.
  • Add the carrots and fry until they have softened a bit (about 3 min). Then add the peppers and continue to fry on high for another 3 min. Then transfer to a bowl and set aside.
  • Now add 4 tbsp rapeseed oil to the wok and heat on high.
  • Add the prepared wok sauce and bring to a boil briefly.
  • Add the precooked rice and stir briskly with 2 wooden spoons.
  • Once the sauce has been completely absorbed by the rice (about 3 minutes), add the leeks and mix them into the hot rice.
  • Then add the pre-cooked peppers, peas and carrots and continue sautéing and stirring until they are also hot.
  • Optional: sprinkle chopped peanuts on top.

Now you're done and ready to enjoy your homemade fried rice!
